Spring Pesto Pasta


1 lb. of gluten free pasta- we like this brand- https://ancientharvest.com/rotini/ 1.5 cups fresh shelled peas 4 cups fresh arugula 1 lb. asparagus, chopped ½ cup of vegan pesto- we like this brand- https://www.gothamgreens.com/our-greens/ 1 Tbsp. olive oil

Cooking Instructions

Cook the pasta according to the directions on the package. Once done, drain, and add the pesto. Toss to coat pasta.
In a saucepan, saute the peas and arugula with a little bit of oil, for about 7 minutes, until lightly browned.
Add the sauteed veggies to the pasta, and mix.
Add in arugula, mixing in evenly.
Serve warm or chilled, and enjoy!
