Roasted Summer Squash
- 3-4 summer squash, cut thinly perpendicular to length of vegetable
- 1-2 cloves garlic, crushed
- Salt, pepper
- Preheat oven to 400°F.
- Toss squash in bowl with garlic, oil, salt, and pepper.
- Oil oven safe dish, and lay squash slices on dish slightly overlapping.
- Sprinkle with Pecorino Romano, if desired.
- Bake for 15 minutes until browned.
