Roasted Summer Squash

Ingredients

  • 3-4 summer squash, cut thinly perpendicular to length of vegetable
  • 1-2 cloves garlic, crushed
  • Oil
  • Salt, pepper

Cooking Instructions

  1. Preheat oven to 400°F.
  2. Toss squash in bowl with garlic, oil, salt, and pepper.
  3. Oil oven safe dish, and lay squash slices on dish slightly overlapping.
  4. Sprinkle with Pecorino Romano, if desired.
  5. Bake for 15 minutes until browned.
