Healthy Black Bean Pantry Brownies

Ingredients

  • 1 can of black beans
  • 1/2 cup cacao powder
  • 2 eggs-room temp
  • ⅓ cup melted coconut oil or butter
  • 2 tsp vanilla extract
  • ½ tsp salt + more for sprinkling
  • 1 tsp baking powder
  • 1/2 tsp coffee grounds
  • ¼ cup coconut sugar
  • 1/2 dark chocolate chips/walnuts
  • Optional: top with more chips and unsw coconut flakes

Personal tips

  • These brownies are super low in sugar! 1 square (w/ the choco chips) has roughly 8 grams of sugar, 9 grams of fiber and 7 grams of protein! If they’re not sweet enough for you or your kiddos, I recommend adding 1 T of local honey to the recipe
  • Coconut sugar is a lower glycemic, less processed granulated sugar that contains some trace vitamins, minerals and a fiber called inulin. If you don’t have it in your pantry at the moment you can sub whatever granulated sugar you have on hand!

Cooking Instructions

  1. Preheat oven to 350
  2. Line a square baking dish with parchment
  3. Combine all ingredients in a food processor/blender
  4. Pour batter into baking dish
  5. Bake 30-35 until  toothpick comes out clean
  6. Cool for at least 15-20 min and then serve
