Cinnamon Roasted Carrots

Ingredients

  • Large carrots
  • Cinnamon
  • Coconut oil
  • Coconut butter

Cooking Instructions

  1. Preheat oven to 375
  2. Wash/peel carrots and chop into bite-sized chunks
  3. Line a baking sheet with parchment paper
  4. Melt coconut oil and toss carrots on a baking sheet in the oil, sprinkle in cinnamon-more if you like!
  5. Bake at 375 for ~30 minutes or until carrots are soft
  6. Melt coconut butter and drizzle over cooked carrots (can also alternatively scrape a few tsp from the jar and sprinkle over warm carrots-it will melt!)
