Ingredients
- Large carrots
- Cinnamon
- Coconut oil
- Coconut butter
Cooking Instructions
- Preheat oven to 375
- Wash/peel carrots and chop into bite-sized chunks
- Line a baking sheet with parchment paper
- Melt coconut oil and toss carrots on a baking sheet in the oil, sprinkle in cinnamon-more if you like!
- Bake at 375 for ~30 minutes or until carrots are soft
- Melt coconut butter and drizzle over cooked carrots (can also alternatively scrape a few tsp from the jar and sprinkle over warm carrots-it will melt!)
