- 5 large carrots, peeled and shredded (Use a Cuisinart with the shredding blade if you can.)
- ½ cup dried cranberries or raisins
- 1 cup slivered toasted almonds
- 1 piece garlic, crushed
- ½ cup mayonnaise
- 1-2 lemons, juiced
- Salt, pepper, oil
- Parsley for garnish
- May be made 1-2 days ahead of time; does well when it marinates, just be sure to mix it!
