Ingredients

  • 5 large carrots, peeled and shredded (Use a Cuisinart with the shredding blade if you can.)
  • ½ cup dried cranberries or raisins
  • 1 cup slivered toasted almonds
  • 1 piece garlic, crushed
  • ½ cup mayonnaise
  • 1-2 lemons, juiced
  • Salt, pepper, oil
  • Parsley for garnish

Personal tips

  • May be made 1-2 days ahead of time; does well when it marinates, just be sure to mix it!
