Auto-Immune Paleo Mash

Ingredients

  • 1 large onion-finely chopped in food processor
  • 3 large carrots (washed and peeled)
  • 3 large parsnips(washed and peeled)
  • 2 zucchini (washed)
  • 1-2 T avocado oil
  • ½ cup fresh parsley

Cooking Instructions

  1. In a food processor finely dice onion
  2. Shred or finely dice: 3 large carrots, 3 large parsnips, 2 large zucchini
  3. Sautee all veggies  in a large pot/cast iron pan in avocado oil or coconut oil until soft
  4. Add ½ cup finely diced parsley
  5. Optional: Salt/pepper/garlic, roasted green beans, arugula, protein of choice (chicken/brisket/etc), diced cooked sweet potato
  6. Serve warm and enjoy!
