Apple Cinnamon Noatmeal

Ingredients

  • 2 teaspoon coconut oil
  • 2 cups cauliflower rice (recommend frozen riced cauliflower)
  • 1/2 cup full fat canned coconut milk (use another milk such as Ripple or flax milk if coconut doesn’t work for you)
  • 1 chopped green apple
  • 1 teaspoon cinnamon
  • 1-2 good shakes of nutmeg
  • 2 scoops collagen peptides (I used Vital Proteins brand); can also try a vegan protein powder if preferred
  • ¼ cup chopped walnuts

Cooking Instructions

  1. Turn stove on medium, add coconut oil to the pot
  2. Once melted, add cauliflower rice and stir around to heat and mix into oil (3-5 min)
  3. Add chopped apple (reserve a bit for topping) and spices
  4. Add coconut milk and and turn heat up to medium/high and bring to bubbling
  5. Once bubbling, reduce the heat to low/med and simmer for 3-4 minutes, stirring occasionally; add more milk as needed for desired thickness
  6. Remove from heat and let cool a bit; whisk in collagen
  7. Add walnuts over top
  8. Serve with additional chopped apple on top, warm milk & cinnamon
