• 2 cups canned coconut milk (must be full fat)
  • 1/3 cup xylitol, or sweetener of choice (also recommend using 1-2 dropperfuls of liquid stevia or monk fruit)
  • 1/8 tsp salt
  • 1 1/2 tsp pure vanilla extract or vanilla bean paste

Cooking Instructions

  1. Mix together all ingredients (add optional blend ins if desired)
  2. Pour into ice cube trays and place in freezer for at least 1-2 hours
  3. Once frozen, blend all cubes in a high speed blender
  4. Serve in bowls with toppings of choice
  5. Optional-freeze again if firmer texture desired

Freeze up to a month; keep serving sizes small, this stuff is rich!
