Kale Brussels Detox Salad with Lemon Turmeric Tahini Dressing

Gluten-Free, Dairy-Free, Vegan, Gut Healing, Detox, & Paleo!

Serves Many!

 

Salad Ingredients

  • 1 head of organic dinosaur kale
  • ½ pint raw organic brussels (~8-10 brussels sprouts)
  • 1 large beet
  • ½ cup raw almonds
  • 2-4 T Coconut aminos

Dressing Ingredients

  • ½ cup tahini
  • Juice of 1 lemon
  • 1 T extra virgin olive oil
  • ½ tsp turmeric
  • 1 clove garlic-minced
  • ~¼ tsp sea salt
  • pinch of black pepper
  • ~3-4 T warm water (or more if you like a thinner dressing)

Preparation

  • Preheat oven to 400
  • Wash, peel and chop beets into bite sized pieces
  • Spread out a sheet of parchment paper on a baking pan, spread out beets and spray with avocado oil, sprinkle with sea salt
  • Add kale/brussels to a large bowl (there should be more kale to brussels)
  • Roughly chop almonds
  • Place almonds in a pan on low/medium heat with a few tablespoons of coconut aminos and a dash of sea salt
  • Roast for ~10 minutes or until slightly fragrant and toasted
  • Mix up the dressing:
      1. Combine all ingredients in a mason jar and shake to combine
      2. Shake and mix; add warm water to thin as needed and salt to taste

Tip

  • The black pepper is mainly added for health benefit vs. taste-it enhances the anti-inflammatory benefits of the turmeric!
